Eggless Cake (Using Buttermilk)

It was time again when i had to bake a cake for my class.. Just then i did see Madhuram's post of egg substitute event using buttermilk. Was not sure as to how the taste would be as i have never tasted a cake with butter milk. So decided to bake a very small cake . Modified my mom's vanilla cake recipe. One thing i read in a book sometime back was not to over beat the cake once the soda water was added.So did follow that and the resultant cake was really soft ..


Ingredients:
All-purpose flour -- 1 1/3 cup
Buttermilk -- 1/2 cup
Sugar -- 2/3 cup
Butter -- 1/3 cup
Baking powder -- 1/2 tsp
Vanilla essence -- 2tsp
Soda water -- 1/2 cup

Method:
  • Sieve together All-purpose flour and baking powder. Keep aside
  • Mix sugar and butter till soft and fluffy .
  • Add buttermilk and stir well until blended.
  • To the buttermilk mixture, add all-purpose flour, soda water and mix well. But don't over mix.
  • Finally add vanilla essence, mix well and pour in a greased cake pan.
  • Bake at 350 degrees F for 15 to 20 minutes or till a toothpick inserted comes out clean.

Hi Sumathi,
I tried doing this vanilla cake...but the cake was very soft inside....i mean it was not fluffy and spongy but very soft inside..i did bake it properly,but it didnot come out well.The sugar butter beating it came creamy ..then i added buttermilk(homemade)..does the butter sugar mix has to fluffy?or i'm confused wht went wrong..can u please help me out with this....

Hi Sushma

firstly thanks for trying my vanilla cake recipe..
The sugar and butter needs to be really creamy and fluffy.
You can use homemade buttermilk..
Over mixing of the cake batter would also not result in a good cake..
So after beating the buttermilk well with sugar and butter, slowly add the flour and mix then add the soda water and bake immediately.
Once the soda water actsimmediatelyit starts reacting , so place in it the oven immediately..
Check for the correct oven temperature and also position the rack in the center..

the cake came out soft. when buttermilk was whisked it looked a bit curdled........does the buttermilk mixture have to creamed or gently combined...........do guide

tried ur recipe...the cake came out soft but not spongy....... any give a time limit how long to cream the butter and sugar.......and how long to whisk the butermilk mixture... bear with me i am a novice baker...thanks

Sorry for the delayed respose.. I am just back to blogging after a long break..
You got to really beat your butter, sugar mixture well , nice and fluffy, and after adding buttermilk also you need to whisk it really well.. The more the fluffy whisking you do the cake is soft..

Thanks for wanting to try my cake and advance birthday wishes to your son.
Being your son's B'day and serving for kids a richer cake would be better . I would prefer you making the Eggless yellow cake or Simple white cake which comes out good as cupcakes too.
With regard to this buttermilk cake you can make it as cupcakes too..
