Saffron Walnut Eggless Cake


Isn't the name catchy.. That is what made me try this .I wanted to make something special for Valentine's Day.. Was searching for an eggless cake recipe. Found this interesting recipe on Mythreyee blog http://www.paajaka.com/2006/11/saffron-walnut-eggless-cake.html . It is very simple and is simply delicious. Combination of saffron ,walnuts and sweetened papaya makes it simply superb. The brown crust and soft inner texture is a dissolve in the mouth. I have just made one change to the recipe , which called for tuti fruti but have substituted it with sweetened papaya ..Here goes the recipe ..

Ingredients:
Maida -- 2cups
Butter -- 1/3 cup (Melted and kept)
Powdered Sugar -- 1/2 cup
Sweetened Condensed milk -- 1/2 can
Baking soda -- 1/2 tsp
Baking powder -- 1tsp
Vanilla essence -- 1/2 tsp
Yellow food colour -- 1 drop
Water as needed
Chopped Walnuts -- 1 cup
Sweetened papaya -- 3tbsp
Saffron -- 1 teaspoon
Milk -- 1 tablespoon
Add Saffron to Milk and stir. Keep it aside
Method :
  • Sift the Maida , baking powder and baking soda. Keep it aside.
  • Put melted Butter in a bowl and add Powdered Sugar,Beat well till fluffy.
  • Now add Condensed milk and vanilla essence and mix really well.
  • Add Maida in one thirds and fold gently using a spatula .When blended well beat well to form a cake-like batter. While mixing the Flour, if the Consistency is tight, add little water and beat for 3 to 4 minutes.
  • Add the sweetened papaya, Nuts and Saffron Milk Mixture, yellow food colour and Mix gently.
  • Pour the mixture into a greased cake pan and bake it in preheated oven at 350 F for Approximately 35 to 40 minutes.
  • Use a Skewer to see if the Cake is done. When inserted into the Cake, and if nothing is clinging to the skewer and the Cake has a golden color crest on the top, it means the Cake is done.
  • Remove from the Oven and let it cool down for 10 minutes and toss the cake upside down and let cool completely. Slice and Serve.
  • Do frosting and Icing if you prefer.
